The Inn at Bay Fortune is a rambling shingled house on the eastern shore of Prince Edward Island, overlooking Bay Fortune and the Northumberland Strait. It is owned and run by the chef Michael Smith and his wife Chastity, and the whole operation orbits its kitchen.
That kitchen is built around a twenty-five-foot brick-lined wood-burning hearth, the engine of the nightly FireWorks Feast: an oyster hour in the garden, then a long communal dinner cooked entirely over live fire from the inn's own eight-acre organic farm and Island fishermen. It has become one of the defining food experiences in Atlantic Canada.
Rooms are spread between the main inn and adjoining buildings, comfortable rather than grand, with views over the water and the farm. Beyond the table there are beaches, the Confederation Trail and the red cliffs of the island's north shore within easy driving distance.
