Manoir Hovey was built in 1900 as a summer house modelled on Mount Vernon, and it still reads that way — white columns, deep verandas, lawns running down to the water. Thirty-five acres of garden and woodland surround it on the shore of Lake Massawippi, in the Eastern Townships an hour and a quarter south of Montreal.

Food is the engine of the place. Le Hatley, the main dining room, holds Michelin recognition alongside the more casual Tap Room, and the kitchen builds its menus around Townships farms and the hotel's own gardens. The cellar is deep in Quebec and French bottles.

Rooms run from snug attic doubles to lakeside suites with fireplaces and private terraces. The spa offers lakeside treatments and thermal circuits; in summer the hotel keeps canoes, kayaks, sailing boats and a beach, and in winter fits guests out for snowshoeing and skating on the frozen lake.
