Ynyshir
Gareth Ward's obsessive tasting menu, and rooms you stagger back to afterwards

Ynyshir is not really a hotel that happens to serve food; it is a restaurant that happens to have beds. Gareth Ward and Amelia Eiriksson run a single, very long tasting menu of intensely reduced, fermented and aged Welsh ingredients — mutton, wagyu raised nearby, Cardigan Bay seafood — served to a soundtrack played at concert volume in an open kitchen. It is one of the most decorated kitchens in Wales and among the most talked-about in Britain.
The house itself is a white-painted former manor on the edge of the Dyfi Biosphere, once owned by Queen Victoria. Bedrooms and suites are dark, tactile and deliberately theatrical, several with freestanding baths and views over the marsh; some are in converted outbuildings a few steps from the main house.
Stays are sold as packages built around dinner rather than as room-only rates, so the headline figure is high and covers the full experience. The RSPB reserve at Ynys-hir is next door and the Dyfi estuary is a short walk away.
