Epitome is the largest and most contemporary of the Canaves properties in Oia, a family-run group that has been working this stretch of the caldera rim for decades. Rather than the warren of converted cave dwellings that defines older Santorini hotels, Epitome is a deliberately architectural piece of building: clean white volumes stepped down the slope, each accommodation given its own pool or plunge pool and a terrace angled so that you rarely see a neighbour.

The interiors lean modern and uncluttered, with pale stone, linen and timber doing most of the work and the view supplying the colour. Suites run from generous one-bedroom units up to multi-room villas suited to families or two couples travelling together, and the largest have their own kitchens and outdoor dining areas. Service is the reason most guests come back: the staffing ratio is high and the team is notably good at arranging boats, tables and transfers without fuss.

Dining is a genuine strength, with several restaurants across the Canaves estate available to guests, a strong Greek wine list drawing on Santorini's Assyrtiko producers, and a spa that handles the usual post-flight recovery. Note that Oia's caldera hotels involve steps, and Epitome is no exception, though it is less punishing than some of its neighbours.
